Mango cheesecake with toasted coconut
As light as a feather, this cheesecake will leave you dreaming of holidays…
Serves 10
150g ginger nut biscuits
30g butter, melted
5g fresh ginger, peeled and grated
125g golden caster sugar
200g cream cheese
280g 0% fat Greek yogurt
3 medium eggs, separated
Grated zest and juice of 1 lime
1tbsp cornflour
flesh of 2 medium ripe mangoes
juice of 1 lemon
3 gelatine leaves, soaked in cold water for 5 mins, then any excess water squeezed out
10g dried coconut flakes
20g blueberries
