Middle Eastern lamb kofta with mint sauce
Easy to prepare with a new twist on mint sauce, which would go just as well with BBQ lamb cutlets.
Serves 4 • Ready in 30mins
500g minced lamb
1tsp ground cumin
1tsp ground coriander
1tsp dried mint
1 garlic clove, crushed zatar, to serve
for the sauce:
35g fresh mint (a large handful)
2tbsp pomegranate molasses
juice of 1 lemon
Mix together the lamb with the spices and garlic, and season well. Mould into 8
