After years of pre-packaged offerings, Melinda's youngest daughter clenched her fists and yelled, with all the drama an eight-year-old can muster, "No More Pot Pie, Mom!! It's just... gross!" Pot Pie was Melinda's favorite freezer-to-oven option after pizza, and what kid complains about pizza? Apparently her daughter had had enough of it though. After a little talk about attitude, they sat down together to talk about food, and chose a few new recipes to create from scratch. Her family loved the "real" food so much, she knew a change was necessary. The problem was, Melinda was still just as busy. She didn't have the time to cook for hours each night. Overtime, she found that some of their favorite recipes could be made ahead of time and frozen. For years now, she's been cooking on Sunday afternoons and freezing meals for the crazy days later in the week. At the request of family an d friends, she's recently created her first cookbook.
