      Apple and Cheddar Sandwiches

      Servings: 4

      Ingredients

      2 large apples

      1 cup shredded cheddar cheese

      Sprig of thyme, leaves removed

      1 tbsp. melted butter

      1 tsp. honey

      Instructions

      1. Cut apples crosswise into ½-inch thick disks. Carefully remove the seeds.

      2. Mix shredded cheese with thyme leaves and spread over half of the apple slices. Cover with leftover apples.

      3. Heat grill pan over medium heat. Mix butter with honey and brush apple slices with this mixture.

      4. Grill on both sides until cheese has melted and grilled marks have appeared on apples.

      Chicken & Ricotta Sandwich

      Servings: 1

      Ingredients

      1 boneless, skinless chicken breast

      Salt and pepper to taste

      ½ cup shredded mozzarella

      ½ cup ricotta

      1 tbsp. grainy mustard

      1 tsp. dried Italian herbs

      ¼ cup spinach leaves

      Instructions

      1. Season chicken breast with salt and pepper. Over medium-high heat, cook for 4 minutes on each side or until cooked through. Let sit on a plate for a couple
