Coloring is important. It's meaningful. It's creativity and artistic expression. It's fun. It's a finished work to take home and feel good about. Of course, it also lays the groundwork for myriad other skills and abilities such as writing, reading, concentration, attention to detail, completion of work and self-esteem.
