    Cookbooks come in all types. Some focus on regional cuisines, some advocate certain diet plans, and others are built around a single ingredient. However different they all may be, the common denominator is the creation of food (or, in some instances, what passes as food).

    This cookbook is really about health. It’s about nourishing your body with phytochemicals and nutrients that aid your body in fighting disease. It isn’t by someone famous who espouses the next new thing. There are no celebrity chefs behind the scenes. There is just Pam—who made a commitment to life when the odds were stacked against her.

    As a Board Certified Specialist in Oncology Nutrition, I spend a lot of time disseminating myth from fact. Science is constantly evolving, and so too are opinions of what foods are beneficial. There is definitely gray area out there, but there are also numerous scientific studies supporting the disease-fighting powers of certain foods.

    According to the National Cancer Institute, one in two people born today will be diagnosed with cancer (based on cancer rates from 2005-2007). If we know that eating a largely plant-based diet can aid in the prevention of cancer, heart disease, diabetes, and other chronic illnesses (and we do know this via scientific research), why wouldn’t we all try to eat this way? What do we have to lose? We may lose weight, and we may also gain greater health and longevity.

    There are no guarantees that eating well and exercising will provide you with a disease-free existence. However, when we know that eating poorly and being sedentary may lead to disease, the choice seems obvious. Eat well!

    You will find so many delicious, hearty, and healthful recipes in this cookbook that will satisfy everyone. There truly is something for everyone—even the die-hard meat-and-potatoes types will be impressed.

    So ask yourself this, Why wouldn’t I do everything in my power to be healthy and prevent disease? You have the power to help prevent cancer and other chronic illnesses. As a healthcare practitioner, I highly recommend that you use it.

    My doctor gave me a 15% chance of survival. I sat at my dining room table, shell-shocked and numb. Then I thought, ‘Wait a minute. When have I not come into the top 15% of anything once I put my mind to it?’

    Introduction

    I recently went to a reunion and during the in memoriam section, as the pictures of those no longer with us flashed up on the screen, a friend leaned over to me and whispered in my ear, Just think, your picture could be up there. He didn’t need to remind me. I was already thinking of that and counting my blessings. I am a late-stage cancer survivor who defied the odds and in all probability shouldn’t still be here. But I am, and I believe with all of my heart that food is a major reason I survived to write this book.

    In the summer of 2004, I was diagnosed with late-stage cancer and given the estimate of a 15% chance of survival by my doctor. I knew there wasn’t much about the cancer journey that I could control, but I was going to make the most out of what I could control, mainly diet and exercise. I immediately started a continuing research project on foods and their relationships to cancer, and found this to be true: Some foods have been scientifically shown to help prevent certain cancers, and other foods have been scientifically shown to help cause certain cancers. Studies have confirmed that specific nutrition does help prevent certain cancers, but not shown it for other cancers…yet. The evidence to date is inconclusive for some cancers, but that doesn’t mean it might not prove positive at some date in the future. In the meantime, it is reasonable to follow as healthy a diet as we can.

    If you’ve picked up this book, you probably have cancer or know someone who does. Quite frankly, who doesn’t? According to the American Cancer Society, Cancer is the general name for a group of more than 100 diseases in which cells in a part of the body begin to grow out of control. Although we tend to take it in stride as we live our lives, in fact it’s an epidemic. Like an elephant in the middle of the room, we ignore it and walk around it until we are forced to deal with it. We think that maybe if we ignore it, it will go away. Cancer is still the dreaded C word. Everyone’s afraid to say it, to talk about it. Unfortunately, it’s not going anywhere. The elephant is only getting bigger. I hear it all of the time: My mother, my sister, my father-in-law, my son, my dog… No one is immune to this monster. It will eventually touch all of us in one way or another. And yet, we keep tiptoeing around it hoping it won’t happen to us, but it can. When the dreaded diagnosis is heard, most people will do anything to help themselves. Why not start before you have to go through what I did? Before your children have to go through what I did?

    Studies now show that if you are female and reading this book, you have a one in three chance of getting cancer in your lifetime. Not your neighbor or your co-worker—you. Don’t think it’s always going to be somebody else. The fact is, you have a good chance of getting it. If you’re male or a newborn, it’s even worse. You have a one in two chance of getting it. Children being born today are up against terrible 50/50 odds of getting cancer in their lifetimes unless changes are made.

    There is some light amongst the darkness here. According to the report in the online journal Cancer (March, 2012), the U.S. Centers for Disease Control and Prevention, the American Cancer Society, the National Cancer Institute, and the North American Association of Central Cancer Registries, death rates for all cancers including the four most common (lung, colorectal, breast, and prostate) have steadily declined from 1999 to 2008. The decline in both deaths and new cases of cancer is believed to be from better scientific understanding of how to diagnose, treat, and prevent cancer in the first place.

    Which means we aren’t helpless against it—far from it. Especially if we start now, before the dreaded diagnosis, while we are still healthy. The reality is that cancer is no longer considered the luck of the draw, or due primarily to genetics. In actuality, only a very small amount of all cancers are due to inherited predispositions from our ancestors. Many cancers are caused by environment, diet, and lack of exercise. A study conducted by the University of Copenhagen and described in the New England Journal of Medicine in March of 1988 reported that children who were adopted at birth had early mortality rates (including cancer) consistent with their adoptive parents. There was no association between early mortality rates and birth parents.

    You might be thinking, Who are you to tell me how to prevent cancer? You got it! That’s correct, I did, but I didn’t get it back again when the odds were heavily stacked against me—and I believe it was my diet and exercise program that have prevented a recurrence. At this time, scientific data is inconclusive as to whether diet can significantly help prevent a cancer recurrence. Still, the American Cancer Society recently released recommended guidelines to promote a healthy lifestyle for cancer survivors. They have long promoted these recommendations to help prevent certain cancers, but they now suggest the same guidelines for cancer survivors to help prevent cancer recurrence.

    Their recommendations are to stay away from tobacco, maintain a healthy weight, exercise, limit time spent sitting—and eat fruits, vegetables, and whole grains. They also recommend limiting your intake of red meat, processed meat, and alcohol. These are the same points that I recommend in my eating plan.

    There is strong evidence that a plant-based diet cuts the risk of cancer overall, so I personally chose to err on the side of caution, and now the American Cancer Society concurs. I chose to create and eat a diet centered around foods that have been shown to help prevent cancer, even though scientific studies were and are still underway regarding their effectiveness in recurrence avoidance.

    The fact is we don’t know for sure why some folks will get cancer and others won’t, or why the time. In the meantime, it continues to make sense that keeping your body as healthy as possible at all times—including before, during, and after the cancer process—helps to fight off the disease. Although scientific proof is still emerging, I believe that it is better for your body and more cancer-preventative to eat a fresh salad than a glazed donut.

    Years ago, I had my head in the sand thinking that cancer is the kind of thing that happens to other people, not me. I was middle-aged and slightly overweight. I didn’t eat that poorly, but my diet wasn’t that terrific, either. I hardly exercised and had a lot of stress in my life. I always heard the latest news about which food was bad for me or which food was good for me, but quite frankly it went in one ear and out the other. Blah, blah, blah, what will they tell me is bad for me next? I blithely went through life eating whatever I wanted, buying larger sized clothing as middle age crept in,
