1 Fragrant halloumi curry

2 tbsp vegetable oil
250g halloumi, cut into large cubes
1 red onion, finely chopped 2 large garlic cloves, finely chopped
15g ginger, finely chopped
2 tsp ground cumin
2 tsp ground coriander
1 tsp kashmiri chilli powder
400g tin of tomatoes150ml 1½ tsp 10g , roughly chopped
