CHICKEN, DATE & OLIVE TAGINE
SERVES 4 / PREPARATION: 15 MINS / COOKING: 4 HOURS
◗ 1 can (400g) crushed tomatoes
◗ 15ml (1T) olive oil
◗ 1 large red onion, thinly sliced
◗ 2 garlic cloves, crushed
◗ 5ml (1t) ground ginger
◗ 10ml (2t) ground cumin
◗ 10ml (2t) sweet paprika
◗ 2,5ml (½t) ground cinnamon
◗ salt and pepper
◗ 12 medjool dates
◗ 8 chicken fillets
TO FINISH
◗ 85g large green olives
◗ handful chopped coriander
◗ handful chopped flat-leaf parsley
◗ couscous
Heat your slow cooker to high.
1 Combine the tomatoes, olive oil, onion, garlic, ginger, cumin, paprika and cinnamon in the bowl of the slow cooker.
2 Season generously with salt and pepper, then give everything a good stir. Cover and cook for 2 hours to let the flavours develop.
3 Stir through the dates, then cover and cook for 1 hour.
Working quickly to avoid losing too much heat, add the chicken to the slow cooker. Nudge it into the sauce and make sure it’s completely covered.
