LAMB ROGAN JOSH

A melt-in-your-mouth curry – perfect for a slow cooker, if you have one.

SERVES 6

3tbsp sunflower oil
1kg (2¼lb) boneless lamb leg, fat removed and cut into 4cm (1½in) dice
250g (9oz) shallots, peeled and thinly sliced
1 cinnamon stick
4 cardamom pods, seeds removed and crushed
