Thai-style green steak curry
A good-quality curry paste provides all the aromatic spice you need, and this recipe is great for clearing the veggie drawer.
SERVES 2 READY IN 15 MINS
✱ 300g pack mixed stir-fry veg
✱ 2tbsp Thai green curry paste
✱ Handful coriander leaves and stalks, chopped separately
✱ 400ml tin light coconut milk
✱ 2 lean sirloin or rump steaks (approx 180g each), at room temperature
To serve (optional):
✱ Steamed rice, crispy fried onions and lime
