White Barbecue Brisket Salad
MAKES 6 TO 8 SERVINGS
3 cups diced buttermilk cornbread (about ½-inch cubes)
2 medium heads iceberg lettuce, cut into 2-inch slices
1 cup shredded sharp Cheddar cheese
½ cup crumbled cooked bacon
2 cups chopped smoked brisket
½ cup sliced pickled okra
White Barbecue Sauce (recipe follows)
Garnish: sliced fresh chives
1. Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.
On prepared pan, arrange cornbread cubes in an even layer.
