Going solo

Yellow curry chicken noodles

■ Serves 1 ■ Prep 10 mins ■ Cook 6 mins

50g dried flat rice noodles
 ½ × 400g can coconut milk
 1 tbsp Thai yellow curry paste
 50ml chicken stock
 150g chicken mini fillets, sliced
 handful of mangetout, halved lengthways
 ½ red chilli, deseeded and shredded, to serve
 small handful of basil, torn, to serve

Put the noodles in a large bowl and pour over enough
