One-pot herb-crusted roast chicken
YOU WILL NEED
✔ 1.5-1.8kg chicken ✔ 2 tsp fine sea salt, plus extra to season ✔ 2 onions, thickly sliced ✔ 4 garlic cloves, peeled but left whole ✔ 2 tsp fennel seeds ✔ 4 tbsp olive oil ✔ 60g butter ✔ 1 lemon, halved ✔ 100ml white wine or water ✔ 1 tsp dried oregano ✔ 1 courgette, sliced into 5mm rounds ✔ 2 × 400g tins or jars of butter beans ✔ freshly ground black pepper ✔ Parmesan, to serve (optional)
DIRECTIONS
■ Preheat the oven to as high as it will go (about 260°C/240°C fan/gas mark 10). Season the chicken all over with the salt, and set aside for 30 minutes. Then dab the chicken with paper towels
