VIETNAMESE PORK STIR-FRY

Serves 4-6 Takes 30 minutes

INGREDIENTS

• 2 tbsp rapeseed oil• 500g/1lb 2oz pork belly strip, sliced into 1cm/½in pieces• 5 cloves garlic, peeled and finely chopped• 2.5cm/1in piece fresh ginger, finely chopped• 1 lemongrass stalk, white part only, thick exterior removed, thinly sliced• 3 green finger chillies, thinly sliced• 4 spring onions, thinly sliced• 1 small onion, peeled and cut into petals• ½ tsp sugar (more or less to taste)• 1 large handful of bean sprouts• 1 red spur chilli, thinly sliced• 1 tbsp fish sauce (gluten-free brands are available)• 1 tbsp light soy sauce (gluten-free brands are available)• 4 tbsp peanuts, lightly crushed• Freshly ground black pepper, to taste
