Quick chermoula fish parcels
Chermoula (a Moroccan herb marinade used for fish) is unbelievably easy and quick to whip up, and makes such a statement of freshness and flavour. All pocketed up in a paper parcel with the fish, chickpeas, red peppers and red onion, it creates a really healthy supper. This dish looks so good served up in the parcels. If you are looking for something to serve with them, I would suggest basmati rice and grilled chard or broccoli.
SERVES 4
• 400g• 100g roasted red peppers from a jar, cut into strips• 1 small red onion, finely chopped• 4 x 150g firm, skinless white fish fillets
