Coffee crème caramel
Espresso and vanilla combine perfectly in this twist on a rich and creamy classic.

✱ 150g caster sugar
✱ 3 medium free-range eggs, plus 3 more egg yolks
✱ 120g soft light brown sugar
✱ 1 vanilla pod, halved, seeds scraped
✱ 300ml double cream
✱ 300ml whole milk
✱ 1tbsp espresso instant coffee powder
✱ 50ml Kahlúa coffee liqueur (optional)
✱ 2 large oranges, segmented, to serve (optional)
