Easy dhal with chapatis

I go for this dhal when I’m pressed for time because I can bash it out in under 30 minutes. It’s amazing with homemade chapatis, but if you’re in a hurry, serve it with shop-bought flatbreads instead.

■ Serves 2 ■ Prep 10 mins ■ Cook 30 mins

200g ‘00’ flour, plus extra for dusting
 1 tbsp olive oil

FOR THE DHAL

2 tbsp coriander seeds
 2 tsp cumin seeds
 2 tsp ground turmeric
 1 tsp garam masala
 1 tbsp oil
 1 onion, finely chopped
 5 garlic cloves, finely chopped
 2.5cm ginger, finely chopped
 400g can brown lentils, drained and rinsed
 100ml vegetable stock
