SPICY BREADED CAULIFLOWER

These crispy pieces of cauliflower are a great veggie snack, made even more tasty with the addition of a hit of spice.

SERVES 2-4

Preparation time: 20 minutes

Cooking time: 30 minutes

FOR THE BATTER

■ 100g (3½oz) plain or gluten-free flour
■ 1 garlic clove, minced
■ ½ tsp dried oregano
■ 150ml (5fl oz) plant-based milk
■ Salt to taste

FOR THE CAULIFLOWER

■ 150g (5oz) panko breadcrumbs
■ 1 cauliflower, cut into bite-sized florets
■ 2 spring onions, thinly sliced

FOR THE SAUCE

■ 3 tbsp sriracha
■ 3 tbsp sweet chilli sauce
■ 1 tbsp maple syrup
■ 1 lime, juiced

1. Heat the oven to 200C/fan180C/ gas 6. Tip the flour into a large bowl along with plenty of seasoning and the paprika, garlic and dried oregano. Slowly whisk in the plant-based milk until you have a smooth, thin batter.
