SUMMER SPECTACULAR

TOMATO PESTO SANDWICH

In the greenhouse, I grow for colour as well as taste - mix and match your tomatoes and make this vibrant sandwich.

SERVES 4

Preparation time: 10 minutes

4 slices of sourdough bread
4 tbsp herby goats' cheese
■ 2 large red tomatoes
4 small orange tomatoes
2 tsp pesto
A few basil leaves

1. Spread the cheese on the bread. Slice the tomatoes and top the bread with the tomatoes in alternating colours.

2. Top with a few basil leaves and a drizzle of pesto. Serve.
