Blackberry Fool & Ginger Nut Topping

Serves: 4

YOU WILL NEED:

250ml double cream3 tbsp icing sugar1 tsp vanilla extract150g cream cheese100g Greek yoghurt200g fresh blackberries2 tsp caster sugar4 crunchy ginger biscuits

You could make theseI might try this again adding a splash of balsamic vinegar to the blackberries before mushing them up.
