SERVES 4 PREP 10 MINS, PLUS 4 HRS MARINATING COOK 4 HRS ON HIGH OR 8 HRS ON LOW (SEE TIP)

1tsp ground cumin
2tbsp curry powder
Seeds from 3 cardamom pods, crushed
3 garlic cloves, crushed
3cm piece root ginger, grated
1-2tbsp hot chilli powder (or more if you like it spicy)
3tbsp cider vinegar
700g pork fillet, all visible fat removed, cut into large chunks
