Dark Chocolate Cake With Dark Chocolate Ganache

For the cake:
1 cup soy milk
1 tablespoon apple cider vinegar
2 cups all-purpose flour
1 cup cocoa powder
1½ cups sugar
1 teaspoon fine salt
2 teaspoons baking powder
1 teaspoon baking soda
1 cup coffee, cooled
½ cup vegetable oil
⅔ cup unsweetened applesauce
2 teaspoons vanilla extract
For the chocolate ganache:
1½ cups chopped dark chocolate
1 cup coconut cream
1 tablespoon vegan butter, at room temperature
