Chicken shawarma couscous

Just let the microwave do its work, then finish with some fragrant herbs and crunchy almonds for a bit of texture.

SERVES 4 PREP 15 mins COOK 7 mins EASY

400g skinless boneless chicken thighs, cut into bite-sized pieces
2 tbsp shawarma seasoning
250ml hot chicken stock
200g couscous
50g dried apricots
1 tbsp olive oil
½ lemon, juiced, plus wedges to serve

chopped coriander
natural yogurt sprinkled with shawarma seasoning (optional)
