Cast Iron Cakes

CASHEW BANANA BREAD

Makes 1 (9x5-inch) loaf

This modern take on a classic quick bread includes salty, creamy cashews and beautiful sliced bananas nestled on top of the golden-brown loaf.

¾ cup sugar
¾ cup cashew butter
½ cup sour cream
¼ cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe banana (about 3 small bananas)
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon kosher salt
1 cup chopped cashews
1 banana, sliced lengthwise
1 tablespoon honey
Cashew butter, to serve

1. Preheat oven to 350°. Spray a 9x5-inch cast-iron loaf pan with baking spray with flour.

2. In a large bowl, combine sugar, cashew butter, sour cream, melted butter, eggs, and vanilla. Stir in mashed banana.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add flour mixture to banana mixture, stirring just until moistened. Stir in cashews. Spoon batter into prepared pan. Top with banana slices.
