WATERMELON AND MINT JAM
Makes 1.5L / 6 cups of jam
INGREDIENTS
– 1kg watermelon flesh
– 1kg jam setting sugar
– 3 stems mint, leaves removed
– Juice of 1 lemon
HOW TO
Chop the watermelon flesh into large chunks. Place in a food processor or blender and blend until smooth.
