Turkey & Cranberry Quesadillas

If you're looking for a quick and easy way to use up the Christmas turkey, these quesadillas are it. The whole family will love them.

Serves: 2-4

Leftover turkey, shredded or sliced
Leftover cranberry sauce
Tortilla wraps
Leftover cheese such as brie,
camembert or sharp cheddar
Fresh coriander, chopped (optional)
Sour cream (optional)
Salsa or hot sauce (optional)

1. Preheat a large pan or skillet over medium heat.

2. Lay a flour tortilla flat on a clean surface or cutting board.

3. Spread a layer of cranberry sauce on 1 half of the tortilla.

4. Add a layer of leftover turkey on top of the cranberry sauce.

5. Sprinkle a generous amount of shredded cheese over the turkey.

6. Fold the wrap in half to cover the filling.

7. Place the quesadilla in the preheated pan and cook for 2-3 mins on each side or until the tortilla is golden brown and the cheese is melted.

8. Repeat the process with the remaining tortillas and filling.

9. Once cooked, remove the quesadillas from the pan and let them cool for 1 min before slicing into wedges.

10. Serve with a sprinkle of fresh coriander on top and optional sides of sour cream and salsa or hot sauce.

You can also add other leftover ingredients like stuffing or mashed potatoes for extra flavour and texture.
