Tell us about your journey into the food world. Where did it begin and how?

In a sense, I fell into cooking through working casually in my early 20s as a dishwasher. I liked the environment, not just kitchens but the whole nuts and bolts of restaurants, and I wasn't put off by the hours or the demanding nature of the work. I also enjoyed the tension of a busy or demanding service.
