It’s not essential to use different-sized cookie cutters but if you do, keep an eye on the star biscuits while I they’re baking. The smaller ones might need to be removed from the oven earlier so that they don’t burn.

Make the paste in advance and store it in a sealed jar in the fridge for a few weeks.
