SWEET CORNBREAD MUFFINS

Some Southerners like their cornbread savory, and others like it sweet, and these yummy muffins offer a little bit of both.

Makes 18

1½ cups all-purpose flour
1½ cups plain yellow cornmeal
3 teaspoons baking powder
1 teaspoon kosher salt
2 cups whole buttermilk, room temperature
1 cup firmly packed light brown sugar
½ cup unsalted butter, melted and slightly cooled
2 large eggs, room temperature
6 tablespoons crushed baked cheese crackers*

1. Preheat oven to 400°.
