RIGATONI with TUNA & SALSA

SALSA
► ½ onion, finely chopped
► ½ green pepper, chopped
► 1 cucumber, chopped
► 1 large firm tomato, diced
► 6 calamata olives, pitted and chopped
► 1 red chilli, chopped
► handful of fresh coriander, finely chopped
► salt and freshly ground black pepper
► juice of 1 lemon
PASTA
► 250g wholewheat rigatoni
► 30ml (2T) olive oil
► 45ml (3T) balsamic vinegar
► 30ml (2T) chopped fresh parsley
► 2 gherkins, grated
► 2 capers, finely chopped
► 2 cans (170g each) tuna in water, well drained
► salt and freshly ground black pepper
