TURNOVER PIES WITH SAVOURY SHORTCRUST

MAKES: 12 I PREP: 1 HOUR I COOK: 30 MINUTES

At the cookery school we use the cold smoker a lot, but don’t despair if you don’t have one as there are plenty of buy-off-the-shelf replacements. Smoked salt, smoked paprika or even smoked oil would give you a similar flavour.

1 tablespoon grapeseed oil1 cup finely diced onion500 grams beef mince½ cup breadcrumbs1 tablespoon whole grain mustard2 teaspoons fine sea salt½ teaspoon allspice½ teaspoon ground cloves1 egg, lightly beaten 1 tablespoon sesame seedsSmoked Tomato Ketchup (see recipe page 81)

SAVOURY SHORTCRUST

340 grams plain flour¼ teaspoon fine sea salt170 grams butter, cubed and chilled6 tablespoons cold water

Combine the flour and salt in a large bowl. Rub in the cold butter, one cube at a time, until the mixture resembles fine breadcrumbs. Slowly mix in the water until a dough starts to form. Add more water if required. Turn out onto a lightly floured bench and knead for a couple of minutes until smooth. Set
