Baked salmon gnocchi
Everyone loves a hearty tray bake, especially one that requires minimal preparation.
SERVES 4 PREP 10 mins COOK 30 mins
✱ 400g fresh potato gnocchi✱ ½ vegetable stock cube dissolved in 100ml boiling water✱ 15g chunky breadsticks or grissini✱ ½tsp chilli flakes✱ 5g Parmesan, finely grated✱ Zest 1 lemon✱ 200g asparagus spears, cut into bite-sized chunks✱ 200g bag✱ 4 salmon fillets✱ 2tbsp low-fat creme fraiche✱ 1tsp wholegrain mustard
