MEATBALLS WITH FETA AND FENNEL Bite-sized joy!
These bite-sized meatballs are the perfect road-trip snack. The feta adds a delicious salty kick that tastes good even when cold!
Ingredients
(makes 32 meatballs)
• 1 tablespoon olive oil
• 1 small white onion, finely chopped
• ½ teaspoon crushed fennel seeds
• A pinch of chili flakes
• 2 tablespoons fresh breadcrumbs
• 1 teaspoon freshly grated lemon zest
• 2 tablespoons flat-leaf parsley, chopped
• 500g ground beef
• Salt and freshly ground black pepper to taste
• 1 wheel creamy feta cheese, crumbled
• 1 egg
• ± ¼ cup flour
• Oil for shallow frying
Here's how
1 Sauté the onion in olive oil until glossy, add fennel seeds and chili flakes, and fry for another minute. Remove from heat and mix in breadcrumbs, lemon zest and parsley. Allow to cool.
