CHOCOLATE-CHERRY CHUNK COOKIE

Inspired by fan-favorite Ben & Jerry’s Cherry Garcia® ice cream, this supersize cookie is chock-full of dried cherries, espresso chocolate chips, and large chunks of white chocolate.

1 (5-ounce) bag dried cherries (about 1 cup)
1 cup cherry cola, room temperature
1 cup unsalted butter, softened
1½ cups packed light brown sugar
2 large eggs
1½ teaspoons vanilla extract
2 cups all-purpose flour
¼ cup Dutch-process cocoa powder
1 teaspoon baking soda
¾ teaspoon kosher salt
1 (9-ounce) bag espresso chocolate chips
1 (4.4-ounce) bar white chocolate, broken into large pieces
1 (4-ounce) bar dark chocolate (60% cacao), chopped
⅓ cup heavy whipping cream

1. Preheat oven to 350°. Spray a 10-inch cast-iron skillet with baking spray with flour.

In a small microwave-safe bowl, combine cherries and cola, and microwave on high for 1 minute. Let stand 10 minutes. Drain.
