Chocolate Bomb

To make sugared carrots, shave assorted tricolor carrots with a Y-shaped vegetable peeler to make 1 cup. In a small pot, bring 1 cup water and 1 cup sugar to a boil for 3 minutes. Add shaved carrot and cook for 10 minutes. Remove shaved carrot using a slotted spoon and lay flat on a wire rack until sticky, about 30 minutes. Toss carrot in additional sugar. Roll each carrot shaving to form a rose.

4½ cups all-purpose flour
2 cups sugar, divided
1½ tablespoons active dry yeast
1¼ teaspoons kosher salt
2 large eggs
1¼ cups warm whole milk (105° to 110°)
¼ cup warm water (105° to 110°)
¼ cup unsalted butter, softened
4 cups vegetable oil, for frying
2 tablespoons ground cinnamon
