PAN-FRIED
EGG NESTS with PAN-FRIED AMASI BREAD

This delicious meal can be enjoyed any time of the day. These eggs are fried in baby marrow nests and served with delicious amasi pan-fried bread.
BREAD
▸ 625ml (2½c) self-raising flour, plus extra for rolling
▸ 2,5ml (½t) salt
▸ 250ml (1c) amasi
▸ 30ml (2T) oil, plus extra for frying
EGG NESTS
▸ 500ml (2c) grated baby marrow
▸ 1 onion, grated
▸ 15ml (1T) chopped fresh coriander
▸ (optional)
▸ 30ml (2T) flour or self-raising flour salt and freshly ground pepper oil for shallow-frying
▸ 6 eggs
▸ 15ml (1T) water
Keep a nonstick pan with a lid handy.
1 Bread Mix the flour and salt and make a well in the middle. Mix the amasi and oil together and pour into the well. Mix until a sticky dough forms.
2 Remove from the bowl and shape into a ball. Cover in clingfilm and leave to stand for at least 15 minutes.
3 Divide the dough into 4 equal parts and roll out on a flour-sprinkled surface, into roughly 1cm-thick discs. Heat the pan and add a little oil. Put one of the dough discs in the pan, turn the heat down and fry for a few minutes until golden brown.
4 Drizzle a little more oil over the dough, carefully turn it over and fry for another 1-2 minutes until the bread has risen and is golden brown and cooked. Repeat with the rest of the dough and set aside. Use kitchen towel to wipe the pan clean.
