GRILLED SALMON TACOS WITH AVOCADO SALSA

PREP 20 MINS COOK 15 MINS SERVES 4 (AS A MAIN)

1 tbsp smoked paprika
2 tsp ground cumin
4 x 120g each skinless and boneless salmon fillets
200g (¾ cup) low-fat natural yoghurt
1 clove garlic, crushed
Freshly ground black pepper
2 small ripe avocados, peeled and finely chopped
1 red onion, finely chopped
2 large tomatoes, finely chopped
2 limes, 1 juiced, 1 cut into wedges
Small bunch coriander, chopped
8 (11g each) taco shells, heated following packet directions

1 Preheat grill on high. Line a large baking tray with foil. Combine the paprika and cumin in a small bowl. Rub the spices over the salmon fillets and place on the baking tray. Cook under the grill for 8-10 minutes or until cooked through.
