Salads that SATISFY

Kale Caesar salad

Try kale in your next Caesar salad for an extra helping of fibre, iron and antioxidants.

SERVES 2 PREP 10 mins COOK 5 mins

✱ 2tbsp buttermilk
✱ 1tsp Dijon mustard
✱ 1tsp cider vinegar
✱ 1 slice yeast-free chia and flaxseed rye bread (such as Biona)
✱ Olive oil spray
✱ 1 garlic clove, crushed
✱ 60g baby kale, washed
✱ 8 anchovy fillets
✱ 2tbsp Parmesan cheese shavings

1 Mix the buttermilk with the mustard and vinegar. Cut bread into cubes.
