WASTE NOT Prepared beef stir-fry strips come from flank, chuck or topside cuts and are usually more expensive than purchasing a whole steak and slicing yourself. To tenderise strips, sprinkle with ¾ teaspoon of baking soda for every 250g and leave for 30 minutes. Rinse well with cold water, pat off excess water and continue as directed.

Jerk salmon with yoghurt potatoes

PREP + COOK TIME 20 MINUTES SERVES 4

8 baby potatoes (320g), unpeeled, sliced thickly
⅓ cup firmly packed flat-leaf parsley leaves
⅓ cup firmly packed coriander leaves
1 teaspoon freshly ground black pepper
1 teaspoon dried chilli flakes
1 teaspoon ground allspice
2 cloves garlic, crushed
2 teaspoons finely grated ginger
¼ cup (60ml) lime juice
¼ cup (60ml) extra virgin olive oil
2 x 200g skinless, boneless salmon
