Elder trees contain cyanogenic glycosides in their berries, bark and stems as alead to nausea, vomiting, diarrhoea and, in rare cases, coma. Thankfully, cooking the elderberries liberates these cyanogenic glycosides, rendering the berries – but not the branches, bark or leaves – safe to eat.
