Parsnips

Found in many vegetable gardens across the country ready to be harvested, parsnips can be described as having an earthy nuttiness and toasted caramel-like flavour.

Perfect for this time of the year, Claire’s Roasted Beetroot, Parsnip and Apple Soup (from issue #31 or at ) brings), the parsnips are roasted – caramelising the natural sugars in the parsnips, developing a lovely nutty flavour.
