■ ½ cup desiccated coconut, plus 2 tblsps extra
■ 3 Weet-Bix, crushed
■ ½ cup firmly packed brown sugar
■ 125g unsalted butter, melted
TOPPING
■ 395g can sweetened condensed milk
■ 3 eggs
■ ½ cup lemon juice
Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm
