My love affair with Italy started 30 years ago,” writes Rome-based food and travel writer Maria Pasquale. “Like all love affairs, it has been exhilarating, exciting and passionate. There have been ups and downs, and times we even almost called it quits.” Raised in Melbourne by Italian migrant parents, the writer moved to Rome in 2011, immersing herself in her heritage.

Soon, food proved the ultimate assimilation tool, which she chronicled for family back in Australia via her blog HeartRome. “Given the passionate nature of Romans as people, it’s no wonder dining is taken pretty seriously.”

Here she shares the recipes that have generously been shared with her, by friends, bakers, experts and chefs. As she says, “with an exception or two, they are not the deconstructed versions or the modern takes, but the Roman classics.” Buon appetito.
