BASIC BROWNIES

MAKES 12 PREP + COOK TIME 1 HOUR 5 MINUTES (+ COOLING)

We retested a number of classic recipes, combining elements to create a ‘super’ brownie, with fudginess, sweetness and the signature shiney top.

175g butter, softened
1 cup (220g) firmly packed brown sugar
1 cup (220g) caster sugar
3 eggs, beaten lightly
1 teaspoon vanilla extract
1 cup (150g) plain flour
¾ cup (75g) Dutch-processed cocoa powder
½ tsp sea salt flakes
125g dark chocolate, chopped finely

1 Preheat oven to 180°C/160°C fan forced. Grease a deep 20cm square cake pan; line base and sides with baking paper.
