2 teaspoons finely grated ginger
4 long red chillies, chopped finely
1kg minced chicken
½ cup (125ml) oyster sauce
230g can sliced water chestnuts, drained, rinsed, chopped finely
2 cups (160g) bean sprouts
4 green onions, sliced thinly
12 iceberg lettuce leaves
⅓ cup (50g) roasted unsalted cashews sliced chilli and baby coriander, to serve
