BOLOGNESE PASTA BAKE

SERVES 4-6 PREP 10 MINS COOK 35 MINS

300g penne pasta
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
500g pork and veal mince
1 zucchini, finely chopped
1 carrot, finely chopped
500g jar pasta sauce
2 tsp dried Italian herbs
½ cup grated tasty cheese
¼ cup chopped parsley, plus extra whole leaves to serve
½ cup grated tasty cheese
1/3 cup grated parmesan

1 Preheat oven to 200°C. Lightly grease a 10-cup casserole dish.

2 In a large saucepan of boiling, salted water, cook pasta following packet directions. Drain well and return to pan.
