MAD ABOUT MINCE!

STICKY PORK IN LETTUCE CUPS

SERVES 4 PREP 15 MINS COOK 15 MINS

2 tbsp peanut oil
500g pork mince
4 garlic cloves, crushed
½ cup brown sugar
1/3 cup fish sauce
4 kaffir lime leaves, shredded
1 cup coriander leaves, plus extra, to serve
½ cup coarsely chopped roasted unsalted peanuts
2 tbsp fried shallots, plus extra to serve
1 long red chilli, sliced thinly, plus extra to serve
2 baby cos lettuce, leaves separated
lime cheeks, to serve

1 In a wok, heat oil on high. Stir-fry pork and garlic 4-5 mins, breaking up lumps.

2 Add sugar, sauce and leaves. Simmer 3-4 mins until thickened slightly. Stir coriander, peanuts, shallots and chilli through. Stir-fry a further 3-4 mins.

3 Spoon mixture into lettuce cups. Sprinkle with extra shallots, coriander and chilli. Accompany with lime.

TIP

You could use chicken or turkey mince instead of pork mince, if preferred.
