GLUTEN-FREE BAKING

Blueberry, apple & lemon muffins

MAKES 6 LARGE MUFFINS

1tbsp chia seeds

60ml boiling water

2 free-range eggs

125ml light oil (e.g. sunfl ower) or melted butter

250ml milk (or non-dairy alternative)

275g gluten-free self-raising fl our

¼tsp bicarbonate of soda, sifted

100g brown sugar

½tsp ground cinnamon

200g fresh or frozen blueberries, plus extra to decorate

150g grated apple, plus extra apple slices to decorate

Finely grated zest of 1 lemon

1 Preheat the oven to 190°C/Gas Mark 5 with the oven rack positioned in the middle of the oven. Line a large 6-hole muffin tin with high-sided muffin wraps (or grease the tin with a little butter or oil if not using papers).

2 Mix the chia seeds and boiling water together in a small bowl. Set aside for 2-3 minutes to form a gel.

Whisk the eggs, oil and milk
