DOUBLE DUTY DINNERS

Beef and chickpea tagine

SERVES 4

This freezes well, so make a big batch and stash some away or make our tasty pasties.

YOU WILL NEED

1tbsp olive oil
1 onion, chopped
3 celery sticks, chopped
3 carrots, chopped
750g stewing beef, cut into chunks
1tbsp harissa paste
1tsp each ground cumin and coriander
150g dried apricots, chopped
200ml hot beef stock
560g bottle passata
400g tin chickpeas, rinsed and drained
260g jar roasted peppers, chopped
Zest of 1 lemon
Handful flat-leaf parsley, chopped
Handful cashew nuts
Couscous or rice, to serve
