What is MASTIC?

MASTIC, OR MASTIHA, IS A PEARLESCENT RESIN GUM THAT COMES FROM TREES GROWN ON THE ISLAND OF CHIOS IN GREECE. IT’S OFTEN USED IN GREEK, TURKISH AND NORTH AFRICAN CUISINES, AND HAS A SLIGHTLY MUSKY, WOODY, VANILLA-LIKE FLAVOUR WITH HINTS OF PINE AND MENTHOL THAT MAKES IT A GOOD MATCH FOR BOTH SAVOURY AND SWEET DISHES. IT CAN ALSO BE USED TO MAKE LIQUEUR. THE TINY RESIN PEBBLES ARE USUALLY GROUND TO A POWDER, WHICH EXTRACTS THE MOST FLAVOUR. IT’S AN INGREDIENT OR .
